We produce delicious varieties of organic honey from nectar and honeydew that our bees forage in the uncontaminated areas of the Alpine Valleys of Piedmont (in the Cuneese), particularly in the woods and flowery meadows of the Monviso Natural Park.

Whether it is mountain honey, acacia honey, chestnut honey, rhododendron honey, wildflowers from the plains and high mountains or forest honeydew, these are harvests that take place exclusively in environments carefully selected for their biodiversity and wild nature, following the blooms up to 2,500 meters of altitude.

Piedmont and the vast variety of nectarous floral species and its different microclimates, offer the natural setting where our company is located and operates.

The Varaita Valley, the Protected Natural Area of ​​the Monviso Biosphere Reserve, Alevè woods and the hills of Langhe, Roero and Monferrato are the places chosen by our bees to forage: there we identified more than 50 sites for bees to stock up on nectar and pollen by flying from flower to flower.

The nectar which our bees produce Acacia Honey with, comes from the robinie trees that bloom on the hills of the Langhe, Roero and Monferrato. A 100% Italian product respectful of biodiversity. Acacia Honey is characterized by soft and transparent notes in colour, and pleasantly sugared aroma. It is the type of organic honey suitable for those who do not particularly like intense and strong flavours. It is excellent in the kitchen as a natural sweetener as it adds sweetness without altering the flavour of food. Ideal for dressing a fruit salad as it is known for its high antioxidant power (fruit does not darken and keeps for a longer time than the traditional lemon and sugar dressing). It can favourably replace sugar and vanilla beans in some desserts such as panna cotta. Like Chestnut Honey, it tends to maintain a natural fluidity even at low temperatures without crystallizing, due to the high fructose content.

The aromas and flavours of this organic honey can vary depending on the flowers at the time and place of production. The colour can also vary from light and transparent to amber. It tends to have a delicate flavour. Despite the different peculiarities of the individual vintages, Wildflowers Honey is always characterized by its spontaneous genuineness that matches every type of palate and makes it perfect as a natural sweetener.

Our fabulous Honeydew is produced in the Asti woods – an area of great ecological value. It is the exceptional nature of the place of origin that makes this organic honey unique - a real masterpiece of taste! Less sweet than the other types of honey due to a greater amount of mineral salts, viscose and very dark in colour almost tending to black. Honeydew honey has an aromatic complexity that amazes the palate and is characterized by fruity, smoky and malty notes associated with hints of caramel. Our fabulous Alpine Wildflowers Honey is created in the territory between Casteldelfino and Pontechianale, in the upper Varaita Valley. It is produced in the Alevè woods - an area of great ecological value for the Alps since it is the only pure forest of Cembro Pine left – they are green diamonds on the slopes of Monviso and recognized worldwide for their biodiversity heritage. The exceptional nature of the place of origin makes this organic honey unique: a real masterpiece of taste! It is unique organic honey, with a delicate and sometimes pleasantly aromatic flavour, which contains all the properties of the nectar foraged by our bees up to 2,000 meters above sea level. Ideal to accompany a healthy and energy-packed breakfast, it is the result of a mixture of different nectars, therefore it has organoleptic characteristics that can vary from year to year, depending on the blooms. Its colour is mostly light or slightly amber.

Chestnut Honey

Our Chestnut Honey is produced in Venasca, in the Varaita Valley, an area of excellence for the production of this typically autumn fruit. The nectar of the chestnut inflorescences, skillfully worked by our bees, turns into a rather fluid honey, resistant to crystallization given the high percentage of fructose. This organic honey is amber in color and characterized by an aromatic fragrance and a strong and decisive flavour. Not too sweet on the palate, Chestnut Honey is initially fresh, and then leaves a characteristic and pleasantly bitter taste in the mid-back palate. In the kitchen it must be used carefully as it has a strong and distinctive aroma. Combined with fatty cheese or salami it has the advantage of degreasing the mouth and enhancing their flavours. Excellent in combination with meat and vegetables with intense flavours. Excellent component in craft beer as well.

Citrus Honey

Citrus Honey

Our organic citrus honey is a melody of floral aromas from Sicily that recalls the magical scent of orange blossoms. It is one of the few types of honey that recalls the flower that produced it. Its distinctly floral flavour is characterized by a pleasant sour note that matches perfectly with less mature varieties of cheese and makes this honey an excellent ingredient to sweeten and flavour fresh dairy products such as yoghurt, cream, ricotta and mascarpone, making them delicious desserts. It has a very fine crystallization with very soluble crystals that release freshness in the mouth. It is this exactly this distinctive consistency that makes it excellent honey for many confectionery preparations. Its colour is very light; a bright golden yellow when it is liquid and turns ivory white when it crystallizes.
